        Fennel/Finocchio

        Fennels prefers temperate climates.  They do not do well
        under intense cold during the growing season.  Long photo
        periods or high temperatures may cause the plant to flower
        prematurely producing inferior quality fruit.

        Rapini/Cima di Rapa

        Varieties of rapini are distinguished by their vegetative
        cycle.  Maturities range from 40-90 days after sowing.
        Rapini prefer temperate to cool temperatures and are
        susceptible to bolting in hot weather.  They are best
        planted in late summer for a fall crop.

        Spinach/Spinacio

        Spinach prefers cooler temperatures and therefore is
        best sown in spring (April or early May), and late
        summer (late August).  Spinach can withstand temperatures
        several degrees below freezing.

        Melons prefer temperate-hot climates and warm, sandy
        loam that is low in acidity.
        Soil temperature is critical to germination and should be
        in the range of 72-78°F for a duration of 5-10 days.
        Seeds should be sown indoors in peat pots from April-May
        and transplanted when weather conditions permit.
        Row covers or "Hot Tents" can be used in short season areas.
